Scrap durian meat from seeds using a spoon.
Use forks and mash durian meat.
Measure your durian meat and add salt with ratio 1 cup of durian meat to 1 teaspoon of salt (i’m using sea salt).
Correction to my video below. 1 teaspoon of salt is enough.
After mix thoroughly, store into glass jar.

Eat with Budu
Recipe:
2 tablespoon of budu (fermented anchovies)
1 tablespoon of tempoyak (fermented durian)
3 cili padi (slice)
1 red chili (slice)
1 red onions (slice)
1/2 cup of water
2 limau kasturi (calamansi) juice
Eat this with salad or rice
Method Two
Mix tempoyak into curry chicken
Basically tempoyak can be used to replace coconut milk because of it’s texture and milky taste.
