For this recipe, you will need to buy 2 grated coconut, each coconut you will get 250 ml of coconut milk hand squeezed using a muslin cheese cloth. Sorry, no photo for this recipe because it’s too delicious and fragrant that we ate everything till the last rice!

Ingredients

Coconut Rice Recipe (Nasi Lemak)

1.5 cup of briyani rice / basmathi rice (soak for 2 hours)
1 coconut milk (300 ml)
1/2 tsp of salt
4 pandan leaves (tear middle and knotted)
2 serai (take the bottom layer, smashed with big knife)
3 slice of ginger
A little bit of water just covering the rice

Method
Add all ingredients and steam for 30 minutes
** Add little bit of water if rice not fully cooked

Sambal Ikan Bilis Recipe

(A) (Blend all ingredients (A)
20 cili kering (soaked in hot water then remove seeds) cut it small using scissors for easier blend
1 big shallot (diced) (tips: soak peeled shallots into basin of water so that you won’t sting your eyes)
6 small shallot (diced)
1 serai (use the bottom – smashed with knife and slice it small)
4 cloves of garlic (smashed with knife and dice)
2 red chilli (remove seeds – dice)
2 slice of ginger (dice)

(B)
1 asam keping
2-3 tablespoon of asam jawa (dilute in 2 tablespoon of water)
1/2 tablespoon belacan powder
2 stalk daun kari
200 ml of coconut milk
3 tablespoon of cooking oil
Handful of ikan bilis
1/4 of ikan bilis cube stock

Method
Blend all ingredients (A)
Heat up wok with 3 – 4 tablespoon of cooking oil
Saute ikan bilis with a tablespoon of sugar then remove cool aside
Heat up wok with little bit of cooking oil. Pour ingredients (A) into wok and cook it
Add in the ikan bilis
Add in ingredients (B) and mix till combined
Add salt and sugar, pepper to taste

Fried Sunny Egg
Heat up 1.5 tablespoon of oil into wok
Fried egg
Remove and served with nasi lemak
