This is a sweet sambal recipe. Here’s the ingredients:

- 100gm dried chillies (cili kering – boil in hot water to soften and cut into small pieces for easy blend)
- 100gm red chillies
- 10gm bird eye (cili padi)
- 250gm shallot (bawang kecil)
- 1 big onion (bawang merah besar)
- 10gm ginger (halia)
- 15gm galangal (blue ginger)
- 30gm garlic (bawang putih)
(B)
- 15gm belacan (shrimp paste to be roasted)
- 3/4 cup of lard / cooking oil
- 40gm tamarind pulp (Air asam jawa)
- Water
- 50gm palm sugar (gula melaka)
- 1 tsp salt (garam)
- 100ml santan
Method
- In a wok, dry toast belacan till aromatic
- Pour in blended ingredients (A),
- Add cooking oil. (i omitted cooking oil for health reason, and i substitute with santan)
- Put in santan tamarind juice, water, palm sugar, salt. Always sieve your tamarind juice first before pouring into paste.
- Stir for 30-40 mins
- Leave it cool and store into fridge or freezer.
