Ingredients
- 1 1/2 cup of dry peanut (roasted peanuts, pounded or grounded to grainy texture)
- 1 cup of water
- 1 tbsp of soy sauce
- 1 1/2 tbsp of palm sugar
- 1/8 tsp salt
- 1/4 cup of oil
- 2 tbsp of asam jawa juice
- 1/2 cup of coconut milk (substitute with milk powder if you don’t have coconut milk)
- 4 buah keras (pounded using pestle and mortar)
- 6 kaffir lime leaves (daun limau purut)(slice)
To blend spices
- 6-8 cili kering
- 3 cloves garlic
- 3 shallots
- 2 lemon grass (serai)
- 1 inch galangal (blue ginger/lengkuas)
- 1 tbsp coriander powder (ketumbar)
- 1 tsp jintan manis
- 1 tsp belacan
- i stalk serai
Method
- Toast peanut in dry wok and crush using pestle and mortar
- Blend spices ingredients
- Heat oil and fry spices in till aromatic
- Add in peanuts, tamarind juice, palm sugar, soy sauce, kaffir lime leaves and water
- Simmer till 3-5 mins
- Served with nasi impit recipe
Note: Add in more palm sugar if it’s not sweet enough
