I’ve been craving for delicious thick coconut milk curry laksa and i was disappointed when i tasted stall curry laksa. It’s either too oily or too watery. So i decided to make my own curry laksa to go with my homemade glutinous rice or sticky rice – Loh Mai Fan in cantonese.
Steamed Glutinous Rice Recipe (Loh Mai Fan Recipe)
Ingredients
1kg glutinous rice
2 tbsp of pork oil (or normal cooking oil)
100 gm shallots (diced)
3 garlics (diced)
2 slices of ginger
100 gm dried shrimp (harmai in cantonese)
6 chinese mushroom (diced) (soak overnight to soften, retain water for steaming glutinous rice)
Lap Cheung (Chinese sausage – remove skin and cut slanting)
Light soya sauce
1 tsp of thick soy sauce
2 tbsp sesame oil
1 tbsp of sugar
2 tbsp of oyster sauce
1 tbsp of sea salt (1 tsp of salt if you are using regular table salt)
Pepper to taste
Water
1.5 Chicken cube stock – I use “Knorr brand”
For garnishing
100 gm roasted peanuts (fried with cooking oil + salt)
Spring onions (slice)
5 red chillies (slice)
5 green chillies (slice)
Fried omelette (after fried then slice)
Method
A Night before:
Soak glutinous rice make sure enough water cover rice, soak mushrooms and retain water
The next day:
Heat up pork oil in wok
Stir fry diced shallots, garlic and ginger
Then put in dried shrimp, diced chinese mushrooms, chinese sausage (lap cheung)
Remove glutinous water and wash thoroughly. Next, mix in and stir fry till combine
Put in all light soy sauce, sesame oil, oyster sauce, thick soy sauce, sugar, salt and pepper.
Mix till combine
Then, transfer to steamer.
Use knorr chicken stock dilute with water (water should cover 1 inch above rice)
Check to see if your glutinous rice is fully cooked, if not enough then add more water.
Tips
(If you have accidentally added too much water, you will need to steam longer hours)
In order to cook non mushy glutinous rice, it’s best to use 300gm of glutinous rice just like the outcome from my previous post (follow Turmeric Rice Recipe)
As for this time, i’m using 1kg it’s a bit difficult when you have to cook so much glutinous rice. You can use a mesh and steam if you want to cook for 1kg glutinous rice. Glutinous rice won’t turn mushy if you use a mesh. I think i’ll get one next time if i came across the right size strainer for my steamer.
Latest Tips: (March 2013)
Pour chicken brother above rice, steam and check if it’s dry, by using a chopstick to overturn rice. Add more broth water and continue steam until rice cooked. I’m using 2 chicken stock cube diluted with 1 litre water for better taste.
Add more shallots and garlic and ginger for better taste. Blend all shallots, garlic, ginger without using water.
